Crispy Roasted Potatoes in Half the Time

Ingredients


  • 1 pound Yukon gold potatoes, scrubbed and cut into 3/4-inch chunks
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon paprika (optional)
  • 1/2 teaspoon dried herbs (Italian seasoning, rosemary, thyme, parsley, herbs de Provence)
  • 1/2 teaspoon garlic powder



  • 1/2 teaspoon kosher salt, plus a few pinches
  • 1/4 teaspoon ground black pepper
  • Optional: Parmesan cheese, chopped fresh parsley, or chives


Instructions

  1. Season the Potatoes: In a large bowl, combine the potatoes with the oil, paprika (if using), dried herbs, garlic powder, salt, and pepper. Toss to coat.
  2. Air Fry: Preheat your air fryer to 400°F. Add the potatoes to the basket and air fry for 15 to 18 minutes, shaking the basket two to three times throughout.
  3. Serve: Transfer the potatoes to a serving bowl or plate. Immediately top with a pinch of additional salt and Parmesan and chives (if using).

Tips

  • Cut the potatoes into even sizes to ensure even cooking.
  • Give the potatoes some space in the air fryer basket so the air can circulate around them.
  • Shake the basket a few times during cooking for even browning and crispiness.

  • Seasoning Salt: A classic option that pairs well with Parmesan and fresh herbs.
  • Truffle Oil: Skip the other seasonings and finish the potatoes with a drizzle of truffle oil and chopped parsley.

  • Creole or Cajun Seasoning: For a little heat.
  • Lemon: Top the potatoes with lemon zest and fresh parsley after air frying.
  • Fresh Herbs: Use dill, rosemary, thyme, or sage instead of parsley or chives.
