Ingredients
For the Salad:
- 1/2 cup thinly sliced red onion
- 1 head romaine lettuce, chopped
- 1 English cucumber, sliced
- 1 pint grape or cherry tomatoes, halved
- 1 green bell pepper, cubed
- 2/3 cup Kalamata olives
- 1 tablespoon capers (optional)
- 8 ounces feta cheese, cubed
- Fresh herbs (optional)
For the Dressing:
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons red wine vinegar
- 1 garlic clove, grated
- 3/4 teaspoon kosher salt
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
Instructions
- Soak red onion in water for 5 minutes.
- Whisk together dressing ingredients.
- Toss romaine with some dressing.
- Add remaining vegetables and olives to romaine.
- Drizzle with more dressing and toss.
- Add 3/4 of feta and toss gently.
- Season with salt and pepper.
- Sprinkle remaining feta on top.
