Lettuce-Enhanced Greek Salad

Ingredients


For the Salad:

  • 1/2 cup thinly sliced red onion
  • 1 head romaine lettuce, chopped
  • 1 English cucumber, sliced

  • 1 pint grape or cherry tomatoes, halved
  • 1 green bell pepper, cubed
  • 2/3 cup Kalamata olives
  • 1 tablespoon capers (optional)




  • 8 ounces feta cheese, cubed
  • Fresh herbs (optional)


For the Dressing:

  • 3 tablespoons extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 garlic clove, grated
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper

Instructions

  1. Soak red onion in water for 5 minutes.
  2. Whisk together dressing ingredients.
  3. Toss romaine with some dressing.
  4. Add remaining vegetables and olives to romaine.
  5. Drizzle with more dressing and toss.
  6. Add 3/4 of feta and toss gently.
  7. Season with salt and pepper.


  8. Sprinkle remaining feta on top.

Notes

  • Store leftovers in an airtight container for up to 2 days.
