Crispy and Caramelized Roasted Cabbage

Ingredients

  • 1 small head of green or savoy cabbage





  • 2 tablespoons olive oil
  • 2 tablespoons butter (or more olive oil)
  • 1 tablespoon honey


  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons Parmesan cheese (optional)
  • Fresh parsley or chives (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Cut the cabbage into eight wedges.
  3. Line a baking sheet with parchment paper and arrange the cabbage in a single layer.


  4. Brush with olive oil.
  5. In a small bowl, melt the butter. Whisk in the honey, garlic, salt, and pepper.
  6. Brush the mixture over the cabbage.
  7. Roast for 15 minutes, then flip.
  8. Sprinkle with Parmesan cheese and continue roasting for 15-20 minutes, or until tender and crispy.
  9. Garnish with parsley or chives.

Tips

  • Don’t worry if some of the edge pieces get extra dark; they’re the best part!
  • You can prepare the cabbage in advance and store it in the refrigerator for up to 2 days.

  • Leftover roasted cabbage can be used in salads or as a side dish.
