Crispy Home Fries: A Diner-Style Treat

Ingredients


  • 1 pound Yukon gold potatoes, cut into 1/2-inch cubes
  • 1/3 cup water
  • 2 tablespoons canola oil
  • 1 teaspoon kosher salt
  • 2 tablespoons unsalted butter, divided







  • 1 teaspoon paprika
  • Freshly ground pepper (optional)
  • Fresh herbs (chives, green onion, parsley, or cilantro) for garnish (optional)



Instructions

  1. Soak and Dry the Potatoes: Soak potatoes in hot water for 5 minutes, then drain and rinse. Pat dry thoroughly with a towel.
  2. Cook in Water: In a large skillet, whisk together water, oil, and salt. Add potatoes and cover. Cook over medium heat for 5 minutes.
  3. Add Butter and Crisp: Add 1 tablespoon of butter and cook for 2 minutes. Uncover and cook for 5 minutes without stirring.
  4. Season and Cook: Stir in remaining butter and paprika. Cook for 3 minutes. Continue cooking, stirring every 2-3 minutes, until crispy.
  5. Season and Serve: Season with salt and pepper. Garnish with fresh herbs if desired.

Variations

  • Home Fries with Onions: Add diced onion to the skillet before cooking potatoes.


  • Spicy Home Fries: Add cayenne pepper with the paprika.
  • Home Fries with Peppers: Add diced bell peppers to the potatoes.
