Ingredients:






For the Cake:

  • 2 1/4 cups cake flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups buttermilk
  • 4 egg whites

  • 1 1/2 cups sugar
  • 2 teaspoons lemon zest
  • 1 stick unsalted butter, softened
  • 1/2 teaspoon lemon extract

For the Frosting:

  • 8 ounces cream cheese, softened
  • 1 stick unsalted butter, softened
  • 2 3/4 cups powdered sugar, sifted
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

Instructions:

For the Cake:

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
  2. Sift together flour, baking powder, and salt.
  3. Whisk together buttermilk and egg whites.


  4. In a separate bowl, rub sugar and lemon zest together.
  5. Beat butter and lemon extract until light and fluffy.
  6. Alternate adding dry and wet ingredients to the butter mixture.
  7. Beat for 2 minutes on medium speed.
  8. Divide batter evenly between pans and bake for 30-35 minutes.




For the Frosting:

  1. Beat cream cheese and butter until smooth.
  2. Add powdered sugar, lemon juice, zest, vanilla, and salt.
  3. Beat on high speed for 3 minutes.

Assembly:

  1. Trim cake layers to create flat surfaces.
  2. Frost the first layer and place the second layer on top.
  3. Spread frosting over the top and sides.
  4. Decorate as desired.
