Ingredients






  • Chicken breasts or thighs
  • Red curry paste
  • Carrots
  • Red bell peppers
  • Light coconut milk

  • Thai basil (or regular basil)
  • Bamboo shoots
  • Peanut butter

  • Worcestershire sauce
  • Coconut sugar (or brown sugar)
  • Lime

Instructions

  1. Sauté the onion in oil until softened.
  2. Add the curry paste and stir to coat the onion.
  3. Bring the coconut milk and basil to a boil.


  4. Add the carrots and bell peppers and boil for 5 minutes.
  5. Reduce heat and add the chicken, bamboo shoots, peanut butter, fish sauce, Worcestershire sauce, and coconut sugar.
