Easy Ground Beef Stroganoff

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef (90% or 93% lean)






  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

  • 6 ounces egg noodles
  • 16 ounces cremini mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 15-ounce can beef broth, divided
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard (optional)
  • 2/3 cup full-fat Greek yogurt at room temperature or sour cream
  • Fresh parsley or thyme for garnish (optional)

Instructions

  1. Brown the beef: Heat oil in a large skillet over medium-high heat. Add beef and seasonings. Cook, breaking up the meat, until browned, about 6-8 minutes. Drain excess grease if needed.
  2. Add the mushrooms: Reduce heat to medium and add mushrooms. Cook until softened and browned, about 8-10 minutes.
  3. Add the flour: Sprinkle flour over beef and mushrooms and stir to coat.
  4. Pour in the broth: Add about one-third of the beef broth and stir, scraping the bottom of the pan. Stir in Worcestershire sauce and mustard. Add remaining broth and bring to a boil.
  5. Simmer: Reduce heat and simmer for 10 minutes, stirring occasionally.
  6. Finish: Remove from heat and let cool slightly. Stir in Greek yogurt. Taste and adjust seasonings as desired.
  7. Serve: Serve hot over egg noodles with fresh herbs.



Recipe Variations

  • Beef Stroganoff with Steak: Use cut-up steak instead of ground beef.
  • Crockpot Stroganoff: Cook in a slow cooker on low for 6-8 hours or on high for 3-4 hours.
  • Instant Pot Stroganoff: Use the sauté function to brown the meat and vegetables, then add the remaining ingredients and cook on high pressure for 10 minutes.
  • Chicken Stroganoff: Substitute ground chicken for ground beef.

Tips


  • Use the best ground beef you can find.
  • Drain the beef if it has a higher fat content.
  • To prevent curdling, make sure the Greek yogurt is at room temperature and add it off the heat.
  • Serve over mashed potatoes for an extra comforting meal.
