Ingredients
- 1 tablespoon olive oil
- 1 pound lean ground beef (90% or 93% lean)

- 1 teaspoon dried thyme

- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6 ounces egg noodles
- 16 ounces cremini mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 15-ounce can beef broth, divided
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard (optional)
- 2/3 cup full-fat Greek yogurt at room temperature or sour cream
- Fresh parsley or thyme for garnish (optional)
Instructions
- Brown the beef: Heat oil in a large skillet over medium-high heat. Add beef and seasonings. Cook, breaking up the meat, until browned, about 6-8 minutes. Drain excess grease if needed.
- Add the mushrooms: Reduce heat to medium and add mushrooms. Cook until softened and browned, about 8-10 minutes.
- Add the flour: Sprinkle flour over beef and mushrooms and stir to coat.
- Pour in the broth: Add about one-third of the beef broth and stir, scraping the bottom of the pan. Stir in Worcestershire sauce and mustard. Add remaining broth and bring to a boil.
- Simmer: Reduce heat and simmer for 10 minutes, stirring occasionally.
- Finish: Remove from heat and let cool slightly. Stir in Greek yogurt. Taste and adjust seasonings as desired.
- Serve: Serve hot over egg noodles with fresh herbs.
