Better-Than-Restaurant Chicken Lettuce Wraps



  • 1/2 cup hoisin sauce
  • 1/4 cup reduced-sodium soy sauce
  • 2 tablespoons rice vinegar

  • 2 teaspoons sesame oil

Chicken Mixture:

  • 2 pounds ground chicken breast

  • 1 small bunch green onions, sliced (white/light green and dark green parts separated)
  • 1 tablespoon grated ginger
  • 2 cloves garlic, minced
  • 8 ounces baby bella mushrooms, finely chopped
  • 1 1/2 cups grated carrots

  • 1/2 teaspoon red pepper flakes
  • 2 cans (8 ounces each) water chestnuts, drained and chopped
  • 2 heads butter lettuce


Slow Cooker Method:

  1. Coat a 5-quart slow cooker with nonstick spray.
  2. Whisk together the sauce ingredients in a small bowl.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Brown the chicken, breaking it into small pieces.
  5. Add white and light green green onions, ginger, and garlic to the skillet and cook for 30 seconds.
  6. Transfer the chicken mixture to the slow cooker.
  7. Stir in mushrooms, carrots, red pepper flakes, and sauce.
  8. Cook on LOW for 2-3 hours, or until the mixture is thickened and the chicken is tender.
  9. Stir in water chestnuts and green green onions.
  10. Separate butter lettuce leaves and fill with the chicken mixture.

Stovetop Method:

  1. Follow steps 1-2 as above.
  2. In a large skillet or Dutch oven, cook the chicken mixture with mushrooms, carrots, red pepper flakes, and sauce over low heat for 15-20 minutes, or until the chicken and mushrooms are tender and the sauce has thickened.
  3. Stir in water chestnuts and green green onions.


  • Don’t overstuff the lettuce wraps.
  • Keep lettuce separate in the refrigerator to maintain crispness.

  • Leftover filling can be stored in the refrigerator for up to 4 days.
  • To freeze, place the filling in an airtight container for up to 3 months. Thaw overnight in the refrigerator before serving.
